Coffee Selection
After meticulous infusion tests in various barrels and endless tasting sessions, we carefully selected Brazilian Arabica coffee beans from the prestigious Alta Mogiana region. These exquisite green coffee beans were thoughtfully rested in Old Tom Gin barrels for 60 days at our roastery. During this period, they were rotated every three days to ensure a homogeneous infusion and an extraordinary aromatic profile.
