For this evaluation, the coffee was tasted in espresso at 91 °C (so as not to enhance bitterness and roughness) with an extraction of 25 ml in 23 seconds.
The crema is of a dark-brown hazelnut colour; you will smell notes of fine wood and cocoa. The taste of this coffee greatly enhances the body and bitterness, contrasted by a pleasant sweetness, with a citrus aftertaste. The acidity is very light.
