In the heart of Colombia, Descafecol has developed a decaffeination method designed to respect the integrity of the coffee bean. The process uses naturally derived ethyl acetate (EA), produced locally through the fermentation of sugarcane by-products.
Decaffeination begins with a steam treatment that opens the structure of the beans and facilitates EA absorption. Applied in successive stages, ethyl acetate selectively binds to caffeine, which is then removed together with the solvent. The coffee subsequently undergoes thorough rinsing and controlled drying cycles.
According to the technical sheet, no chlorinated solvents or artificial additives are used. The EA is recovered and reused, while residues are controlled below 20 ppm. Decaffeination is also carried out directly in Colombia, helping reduce the environmental impact associated with transport and processing.
The lot comes from Tolima and is produced by a collective of coffee growers; the listed varieties are Caturra and Catuai, from the 2026 harvest. The result is a decaffeinated coffee designed to retain the character and organoleptic qualities of its origin.
