Mexico is one of the largest coffee producers in the world. The best production regions are Chiapas and the Veracruz area. From these areas come coffee with a sweet and deep taste, with a consistent body and an intense and chocolaty aroma. The coffees that grow on the mountain ranges of the region are called "Altura", precisely due to the fact that they grow at high altitudes.
NOTES ON GREEN COFFEE
This coffee has an average 18-19 sieve and a low defect level.
If toasted as an espresso (agtron 50-55, Italian) the result is a hazelnut-colored cream with beautiful stripes, with a richer body than what a Central American washed coffee might suggest.
On the nose the sensations are of vanilla and tobacco, with delicate notes of cocoa. The body is light but pleasant. The cup is decidedly sweet, with a nice sour note.
If toasted by filter and brewing (agtron 65-70, full city) the vanilla and milk chocolate notes increase, in some cases the acidity also increases.
