When summer approaches, preparing an excellent iced coffee is a must for every barista and coffee lover! Choosing a cold extraction allows you to avoid extracting any bitter notes of coffee and to limit its acidity.
The Toddy Cold Brew Professional version is an innovative coffee maker created in 1964 by Todd Simpson, a Cornell graduate in chemical engineering. After graduating, the chemist patented the Toddy Cold Brew, "nothing more" than a new filter coffee extraction system. With this extraction, you'll extract only the most pleasant notes from your coffee, with a low acidity and high concentration of antioxidants.
With the Toddy Cold Brew, the extraction takes place by infusion, with cold water. After 12 hours of rest, youll obtain a real coffee concentrate, which can be kept in the fridge for one week. It must then be elongated with cold water (in a ratio of 1 part of coffee concentrate and 2 parts of water), milk, tonic water, or almond milk.
In our tests we use a brew ratio of 250 grams of ground coffee per liter of water.
