A coffee that tells a story of origin, family, and Specialty vision. This Pacamara Gigante lot is born in the heart of Nueva Segovia, between the municipalities of Jalapa and Mozonte, where altitudes ranging from 1,300 to 1,700 meters, clay-sandy soils, and a mix of sun and shade cultivation create an ideal environment for the most refined expression of this extraordinary varietal.
The producer is Luis Alberto Balladrez Moncada, a fourth-generation member of a historic coffee-growing family, now joined by the fifth generation. His vision took shape with the founding of Beneficio De Café Las Segovias, a processing center designed to ensure full control over fermentation, drying, and the final quality of the coffee. The farms La Bendición and Un Regalo de Dios are part of a broader project that, over the years, has earned important recognition, including first place at the Cup of Excellence Nicaragua in 2018.
Harvesting takes place between December and March, selecting only perfectly ripe cherries. A washed process with controlled aerobic fermentation follows, while drying occurs slowly on raised beds. This approach preserves exemplary aromatic clarity and enhances the distinctive flavor definition typical of Pacamara, a varietal celebrated for its large bean size and complex aromatic potential.
As an espresso, this coffee presents a good, enveloping body capable of supporting a sweet and precise aromatic profile. In the cup, clear notes of ripe apricot emerge, intertwining with hints of red apple and raspberry, creating an elegant and never overpowering fruitiness. The aftertaste evolves toward more indulgent notes of milk chocolate and caramelized almond, leaving a persistent, creamy, and harmonious finish reminiscent of fine pastry.
It is a coffee that combines extraordinary genetics, a highly suited terroir, and meticulous processing, authentically representing the production philosophy of Luis Alberto Balladrez Moncada and the quality identity of Beneficio Las Segovias.
